One of the things I enjoy about ATV camping is eating, no tasteless camping meals here. But after a long day of riding or hiking I don’t feel like cooking up a gourmet meal. MRE’s (Meals Ready to Eat) are OK and there actually are some pretty good freeze-dried meals available but I prefer a hearty home cooked meal.
So I prepare some dinner meals at home before the camping trip and freeze them in ziploc boiling bags. When I’m ready to eat, just take the boiling bag out of the cooler and drop it in a pot of boiling water. After 5 – 10 minutes it’s ready to eat and there’s little mess to clean up.
Now breakfast is a different story, I enjoy cooking breakfast. I am typically an early riser when camping, so not to disturb the other campers I will make a pot of coffee and take my first cup of coffee and go on a short hike in the area around the campsite. After my hike I’m ready to start cooking.
For breakfast in the back country I enjoy scrambled eggs and sausage. For ease of packing I use a liquid egg product like Egg Beaters® and frozen sausage patties. Add some salsa, cheese and some spices along with a tortilla and you have a delicious breakfast burrito. Grab another cup of coffee, enjoy my burrito next to the campfire and let me tell you I am ready for what the day has in store for us.
Lunch is always a hard one because I don’t know if I will be out on the trail or at the campsite. So I always carry some jerky and trail mix on the ATV and if I am at the campsite, a sandwich with some cold veggies (I’m partial to baby carrots).
This is one of the great things about ATV camping, you are not limited to what you can carry in a backpack to those back country campsites. You can easily carry a soft-sided cooler and some camping cookware which expands the options for your camping meals. One year one of the guys froze some steaks and carried them in his cooler. We cooked them over the campfire on our last night out and man that was some good eaten.

My favorite recipe for camping is ground hamburger with brown rice and beans. Cook it up at home with some special spices and freeze it in a ziplok bag. Very filling and hearty.
I like to cook and eat eggs in the morning whether it is scrambled or sunny side up. Burrito and baby carrots are also nice too. As for camping meal, I like to eat pancakes and mini-pizza.
